  1. Preheat oven to 350ºF.
  2. In cast iron Dutch oven, saute butter, shallots, onions and garlic until translucent.
  3. Sear chicken on top and bottom. Leave breast side up.
  4. Add raisins, paprika, sea salt, pepper, potatoes, and pour chicken broth around chicken.
  5. Pour half bottle of sweet bourbon glaze over ingredients.
  6. Bake uncovered for 40 minutes.
  7. Take out and add the rest of the sweet bourbon glaze.
  8. Finish in oven for 20 more minutes or until chicken is at an internal temperature of 165ºF.
  9. Once finished, take out of Dutch oven and place potatoes and chicken on a platter.
  10. Garnish with fresh parsley and enjoy!
