Pumpkin-Apple Streusel Muffins

Ingredients

Streusel Topping

Instructions

Muffins
  1. Preheat oven at 350ºF.
  2. In a large bowl, combine the flour, sugar, pumpkin pie spice, baking soda and salt.
  3. In a medium bowl, combine the eggs, pumpkin and oil.
  4. Add the liquid ingredients to the dry ingredients; stir just until moistened.
  5. Stir in apples.
  6. Spoon batter into lightly greased and paper-lined muffin cups, filling 3/4 full. There should be about 18 muffins.
  7. Sprinkle streusel topping evenly over the filled muffin cups.
  8. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
Streusel topping
  1. In a small bowl, combine the flour, sugar and ground cinnamon.
  2. Cut in butter until mixture is crumbly.
