This healthy Teriyaki Salmon Rice Bowl recipe is packed full of protein, healthy fat and fiber, and is soy-based in ways you might not expect. Edamame is a harvested immature soybean, viewed as a popular source of protein. Soy protein, like edamame, is a U.S. Food and Drug Administration (FDA) an approved health claim to prevent heart disease. Soy sauce, as stated in the name, is made from fermented soybeans. While there are a few obvious soy-based ingredients within this recipe, the salmon used in the dish is also soy-based. Prairie Aquatech located in Brookings, South Dakota, is using soybeans to create another sustainable product. Their facility in Volga, South Dakota has patented a fermentation process used to produce a unique protein ingredient. They have created a fermented soy-based protein ingredient called ME-PRO®. The process concentrates the protein and amino acids, while removing the complex sugars and carbohydrates that are difficult for aquatic species to digest.
Prairie Aquatech makes a protein ingredient, not a complete fish food. Much like household pets, fish and shrimp have specific dietary needs that typically require the combination of 8-15 different ingredients to satisfy their nutritional needs. Prairie Aquatech makes a protein ingredient in their food that satisfies these nutritional needs. The formulations are also adjusted for different species.
