In honor of May being National Beef Month, we’re celebrating this tasty protein and the hard work of those who produce it, with this delicious beef barbacoa recipe.

Beef barbacoa is a traditional Mexican dish that is typically made by slow-cooking beef until it is tender and flavorful. The result is a juicy, succulent meat that is perfect for tacos, burritos, and other Mexican-inspired dishes.

Did you know that in South Dakota there are nearly 4.3 beef animals for every state resident? That’s a lot of cows!  

To make beef barbacoa, you will need a few key ingredients. First, you will need a cut of beef that is suitable for slow-cooking, such as a chuck roast or brisket. You will also need a blend of spices and herbs, as well as a mixture of water, vinegar, and lime juice.

Ingredients

Instructions

  1. Combine prepped chuck roast, onions, garlic, green chilies, chipotles, ground cumin, oregano, salt, and pepper.
  2. Whisk together beef broth, vinegar, and lime juice; pour broth mixture over ingredients in slow cooker.
  3. Add bay leaves.
  4. Cover and cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours. Cooked beef should be tender and should fall apart easily when shredded with a fork.
  5. Remove beef from slow cooker and transfer to a cutting board.
  6. Using two forks, or shredder claws, shred the beef into bite-size pieces.
  7. Transfer shredded beef back into the slow cooker; stir everything together until completely incorporated.
  8. Garnish with cilantro or parsley and serve.
