Quick & Healthy Homemade Fajitas

Ingredients
  

Marinade

  • 1/4 cup Olive Oil
  • 1 teaspoon lime rind, grated
  • 2 1/2 tablespoons fresh lime juice
  • 2 tablespoons Worcestershire sauce
  • 1 1/2 teaspoons Ground Cumin
  • 1/2 teaspoons dried oregano
  • 1 teaspoon Salt
  • 1/2 teaspoon coarse ground black pepper
  • 2 garlic cloves minced
  • Fresh cilantro to taste chopped
  • 1 14.25 ounce can chicken broth

Fajitas

  • 1 pound flank steak
  • 1 pound boneless, skinless chicken breasts
  • 1 large Vidalia onion cut into 16 wedges
  • 4 bell peppers (red, yellow, orange) cut into thick slices
  • Flour tortillas

Optional Garnishes

  • salsa, sour cream, shredded cheese

Instructions
 

  • Mix all marinade ingredients together in a large bowl.
  • Trim fat from steak. Score a diamond pattern on both sides.
  • Lightly score top of chicken.
  • Combine 1 1/2 cups marinade, steak and chicken in gallon zip-top bag. Can be marinated in separate bags. Marinate in refrigerator for 4 hours or overnight. Turn occasionally.
  • Combine remaining marinade with peppers and onions in gallon zip-top bag. Refrigerate.

  • Heat grill while removing meats from marinade. Discard meat marinade. Grill meat 8 minutes per side or to desired doneness.

  • While cooking meat, put peppers and onions and their marinade into small skillet. Cover and cook till tender.

  • Tortillas may be wrapped in foil and heated on grill or warmed in microwave.
  • Cut meat on the diagonal into thin slices. Arrange meat and vegetables in 9x13 dish and drizzle with warm marinade from vegetables.

  • Serve warm. Top with garnishes as desired. Enjoy!
