Healthy Bell Pepper Nachos

  • 5 bell pepper (red, yellow, orange)
  • 1 tsp soybean oil
  • 1 pound ground beef
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1 cup soy cheese
  • 2 avocados
  • 1 container plain Greek yogurt or substitute for sour cream


  • Cut bell peppers into fourths and scoop out the seeds and pith. Once your peppers are cut set them aside while you brown your ground beef. After your beef is fully cooked, strain and mix chili powder, cumin, black pepper, and salt into ground beef until evenly coated.
    2) Take the cut bell peppers and put a spoonful of ground beef into each one, sprinkle grated soy cheese on top. Bake on parchment paper at 375 degrees for 10 minutes. Once cooked to your preference top with the toppings of your choice and enjoy!
