Hearty Ham and Cheese Grits

When it comes to holidays like Easter, we love getting together with our families and sharing special meals and great conversations around the dinner table. We’d also be lying if said we didn’t look forward to all of the delicious leftovers from our holiday feats. Sometimes it seems we have enough leftovers to last for weeks, but did you know that, depending on your method of storage, you might have just a few days to eat that leftover ham?

According to the FDA, slices of ham can be refrigerated for three to four days before they should be consumed. However, you can also freeze your ham for longer storage; about 1-2 months.

The FDA also says the best way to reheat a cooked ham is in the oven with the temperature set to at least 325° F. Heat the ham until it has reached an internal temperature of 140° F. You can also eat cooked ham cold.

Ingredients
  • 4 cups Milk non-fat
  • 1-1/4 cups grits quick cooking
  • 1/2 teaspoons Salt
  • 2 cups cooked ham cubed. 1/2 pound
  • 4 ounces Havarti Cheese shredded or cut into thin slices
  • 1/4 cup green onions thinly sliced and divided
  • 2 tablespoons Green Onion thinly sliced and divided

Instructions
  1. In a 2-1/2 quart saucepan, bring milk to a simmer over medium-high heat.
  2. Slowly whisk in grits. Reduce heat to low and cover.
  3. Continue to whisk every minute to keep from forming lumps. Cook about 5 minutes or until grits begin to thicken.
  4. Add ham, cheese and 1/4 cup green onion. Stir until cheese begins to melt.
  5. Cover and remove from heat. Let stand 3 to 4 minutes.
  6. Stir again then spoon into serving dishes.
  7. Garnish with remaining 2 tablespoons green onion and serve warm.
